Grape varieties: Bobal 85%, Syrah 10% and Merlot 5%.
Soils: grapes come from 2 plots with different characteristics:
– La Blasca, deep silty loam soils, with some stoniness that gives freshness to the earth.
– La Laguna, shallow clayey soil.
Altitude: 900 m.
Harvest date: October 2012.
Characteristics: the youngest vineyard, the Merlot, is 14 years old. The Syrah is 22 years old and the Bobal, more than 60. All of them aren’t vigorous, as they are not fertilized and tillage operations are restricted. Average yields: 6000 kg/ ha.
Winemaking: cold pre-fermentation for 3 days. Subsequent fermentation at a controlled temperature of 24ºC during 16 days.
Aging: 11 months in new and second-year French, Hungarian and American oak barrels.
Tasting notes: deep ripe cherry color. On the nose, it has a good intensity and complexity, with ripe red fruit (plum compote), spices (pepper), balsamic notes, cocoa and a well-integrated wood. In the mouth, it presents a good attack phase. The wine is broad, full-bodied and structured, with character and personality, with potent but noble tannins, roasted notes and a great persistence.
Food pairing: red meats, roasts, stews, pasta, semi-soft and aged cheeses and even dark chocolate.
Alcohol: 14.5% vol.
