Origin of the name: like this wine made with Monastrell from old vines that shows its many nuances every time we take a sip, its name also gives rise to various interpretations:
DELIT Spanish word for DELIGHT. 1. Pleasure of the soul and the senses.
2. sensual pleasure.
The pleasure of farming, the pleasure of winemaking, the pleasure of drinking. Whenever, wherever and whoever you are with.
Grape variety: Monastrell 100% from old vines.
Vineyard: over 50 years old vines of Monastrell, located in Salinas, near the Valley of Vinalopó, on sandy and slightly saline soils. Goblet-pruned vines with a very limited production.
Altitude: 550 m.
Harvest: by hand in October 2017.
Characteristics of the vintage: 2017 was a quite hot and dry year, with a cooler September whose moderate temperatures favored the maturation of the Monastrell.
Winemaking and aging: maceration for 7 days with very gentle batonnage. After the malolactic fermentation, the wine was racked to new oak barrels of 300 liters (mostly French), where it was aged on its own lees and on those from the Chardonnay for 12 months.
Bottling: September 2017.
Production: 3 352 bottles.
Tasting notes: medium-high intensity colour that indicates vivacity and elegance. On the nose there is a very pleasant blend of tertiary aromas with hints of sweet fine pastries and creamy red fruit, giving way to an enveloping and rounded wine. In the mouth, it shows an elegant and very tasty entry, leaving a pleasant feeling. Noticeable well-balanced acidity and well integrated tannins. The long aftertaste reaffirms the pleasant sensation of creaminess, inviting you to prolong the pleasure with one more sip, over and over again.
Food pairing: cheeses, pates and foie gras, cold cuts and cured meats, all kinds of meats, stews and casseroles. Good combination with black chocolate and red jams.
