Characteristics of the wine: this wine is made only with the first wine bleeding or free-run juice, obtained without pressing the skin of the grapes at the end of the maceration and aged in oak barrels for one year. The result is an elegant and delicate wine, a combination which is a consequence of the harsh climate, the subtlety of the grape variety and a respectful winemaking. Flor Merlot is an expressive and elegant, intense and delicate wine.
Grape variety: Merlot 100% (free-run juice).
Vineyard: 30 years old vines of Merlot, located at Finca Collado, on clay-loam soils. Trellis system and low planting density, with irrigation support with groundwater.
Altitude: 600 m.
Harvest: by hand in September 2014.
Characteristics of the vintage: 2014 was a year with a long period without rainfall during the growing cycle of the vine and a particularly hot summer in August. In September, temperatures softened and began to cool overnight, which we considered appropriated to hold the harvest a few days more to achieve an optimal phenolic ripeness.
Winemaking and aging: maceration for 7 days with gentle batonnage. At the end of the fermentation, the free-run juice was racked to French (85%) and American (15%) oak barrels, where it remained for 12 months.
Bottling: July 2015.
Production: 6 558 bottles.
Tasting notes: clean medium-high colour intensity with cherry hues. The nose is extremely intense, predominantly fine pastry and blackcurrant aromas, with a slight spicy touch. On the palate the tannins are sweet and ripe, and the whole is very expressive and full-bodied. Medium-long aftertaste that leaves a pleasant and delicate sensation on the mouth, where the main flavors come back, followed by those corresponding to the aging. Acidity is not excessive, just enough to invite to take one more sip.
Food pairing: cheeses, pates and foie gras, cold cuts, all kinds of grilled meat or in sauce, spicy stews. Good combination with black chocolate and red jams.
