Origin of the name and characteristics of the wine: this is the wine that best reflects the history and spirit of achievement of the winery. It is the first blend of varieties that was bottled and still nowadays it remains an originality in the valley of Vinalopó, near the Mediterranean Sea. With the tractor we till the vineyards. The horse is gone long ago, but at Finca Collado its strength still guides us. Complex and serious wine to enjoy immediately or to keep until 2023.
Grape varieties: Cabernet Sauvignon and Merlot.
Vineyards: own vineyards. 30 years old vines of Cabernet Sauvignon, on sandy and chalky soils on terraces. 30 years old vines of Merlot, on clay-loam soils. Trellis system and low planting density, with irrigation support with groundwater.
Altitude: 600 m.
Harvest: by hand in September 2013.
Characteristics of the vintage: 2013 was a quite cool year, especially in summer, which was not too hot or dry, favoring a very good acidity of the grapes during the slow and steady maturation.
Winemaking and aging: maceration for 10 days with gentle batonnage. After the fermentation, the wine remained quietly in the wine tanks during two months before being racked to oak barrels, mostly French. Aged for 12 months in the same barrels and subsequent blending of both wines.
Bottling: June 2014.
Production: 13 448 bottles.
Tasting notes: the colour reveals its long aging in bottle. The nose is dominated by very well blended tertiary aromas with ripe fruit, resulting in an aromatic, sweet and elegant wine. The palate is tasty and balanced, with good entry. Medium-bodied and with ripe tannins, the finish is fresh and long, result of a good acidity. Pleasant aftertaste where aromas of black fruits and unroasted coffee with a fine touch of leather (typical of the Cabernet Sauvignon with a long aging) are predominating.
Food pairing: intense cheeses, cured meats, all kinds of grilled red meats or in sauce, spicy stews.
Alcohol: 14% vol.
