Grape varieties: Merlot 40%, Tempranillo 30 % and Bobal 30%.
Vineyards: planting pattern 3200 vines per ha. High density and leaf surface treillis. Clayey-chalky soils.
Altitude: 750 m.
Harvest: by hand in small boxes of 10 kg between September 23rd and October 19th 2016.
Winemaking: each grape variety is fermented separately. Maceration for three weeks. Malolactic fermentation in French oak barrels from Allier forest (Boutes, Cadus and Saury), fine-grained and slightly toasted.
Aging: 10 months in French oak barrels from Allier forest (Boutes, Cadus and Saury), fine-grained and slightly toasted. The three wines have been oak aged separately before the coupage.
Tasting: clean and brilliant cherry red color with claret hints. Very intense on the nose, with hints of red fruit and ripe black fruit. The palate is fresh, meaty, tasty, creamy and elegant. Well-balanced wine with soft tannins, showing a nice part of fruit with notes of very well integrated wood. Pleasant and long aftertaste.
Food pairing: on its own or with all kinds of meats, stews, rice, pasta, medium and high intensity cheeses, pates and cold cuts.
